Wisconsin, the Dairy Capital of the World, has lead the U.S. in cheesemaking since 1910 and currently is responsible for close to 25% of U.S. cheese production. What many don't know is that this is just one part of an exciting and expansive new food economy.
Madison has a population that is interested and active in food policy. We have a Local Food Committee (Madison Food Policy Council
) that oversees a community process to determine the best ways to enhance the local/regional food economy, address the needs of local growers and producers, and identify the best strategies and location for a public market that will meet these goals.
